If only a single note is displayed when you open the app, click or tap the ellipsis icon ( … ) in the upper-right of the note and then click or tap Notes list. Scroll or search for your note in the notes list. To re-pin a note to the desktop, tap or double-click the note. Apple deleted my notes after I turned iCloud on for notes and they did the same with some of my photos. iCloud is dodgy af when you got 2 devices it seems Apple will sacrifice the contents of one device on Apple ID for the other device on the same Apple ID....
